What’s a Noodledoof?
The rumour mill was swirling when Noodledoof first set up shop in Koroit. Is it a replica of a small German village? Is it a noodle shop serving slurpable bowls of goodness? No, it’s a craft brewery and distillery created by two mates, Noodles (Sam) and Doof (Alex) who wanted to make quality craft beer and spirits that are exciting, adventurous and approachable.
Noodledoof beers utilise local ingredients and are influenced by the changing seasons, allowing the team to get creative in the brewhouse. Most of the beers are made in small batches so they have seasonal availability and can utilise what is good, when it's at its best.
For Noodledoof's range of spirits, they have teamed up with Worn Gundidj Bush Foods, utilising their expert knowledge of the surrounding area. The spirits have a unique flavour profile that comes from native botanicals and other local ingredients.
The Noodledoof taproom is a refurbished motor garage in the small Irish Village of Koroit. The space has been revitalised as a vibrant community hub for tourists and locals alike. Their surroundings inspire them daily, from the beauty of Tower Hill Reserve to the wild South-West ocean.

Every winter breweries and dark beer fans gather in Ballarat for the Obsidian Dark Beer Festival, a celebration of the darker side of beer. We opted to brew a Barrel Aged Sticky Date Porter, going big on the malty caramel flavours with bursts of vanilla. A big and bold Porter made just for the Obsidian Dark Beer Festival.

A tribute to Ireland's rich brewing heritage, our Irish Red Ale boasts a deep copper-red hue and a smooth, easy-drinking character. Killarney Beach, our favorite local swimming spot, features soft, sheltered sandy shores, and its name fittingly nods to the region's strong Irish heritage, just like our beer. Sláinte!

A Belgian Witbier makes for a strong base, light and fluffy and made extra delicious by the addition of coriander and orange. Raspberry is added to amp up the flavour, increasing the juiciness and adding a touch of tartness to the beer. A delicious twist on a recipe that is hundreds of years old.

Local chef Adam Porter used to run the kitchen at Noodledoof and has since spread his wings to start The Pickle Project. We've got the team back together again to collaborate on this Gose. The base is built upon Adam's lacto fermented pickle juice, accented with Geraldton Wax and Desert Lime for a citrus kick, ending with a touch of salinity that is trademark to a classic Gose.

Using our Koroit Vodka as a base we’ve added lots of local organic ginger, desert lime and river mint to bring a unique native twist. Kind of like an Australian Moscow Mule, with plenty of kick.

Raspberries grow all throughout theSouth West of Victoria, including a rather robust patch on Noodles’ farm. We balance out the natural sweetness of the raspberries with native finger lime, to make this a grown-up version of a vodka raspberry.

We’re very proud of the spirits that we make at Noodledoof and we wanted to showcase them in a more... Noodledoof-y way. For our G&T we’ve gone the extra step of making our own tonic water. Chincona bark gives a more natural bitter flavour and a light orange hue. We then select botanicals that pair perfectly with the botanicals in our Koroit Gin.

We sourced the finest malt in the country from Voyager Craft Malt. This malt provides a pure and smooth malt profile. Carefully fermented to provide a clean but rich base for the start of the distillation process.
We then double distill our whisky wash through a unique distillation setup using a combination of our 1500L kettle and 300L copper pot still. This process puts our new make in a great position for the magic of time to do its thing.
The new make whisky is then placed in a locally sourced, 300L French oak ex-shiraz barrel for a three year rest.
With just 300 numbered bottles available this limited edition single malt whisky is sure to be snapped up quickly.

A kettle sour that goes big on tropical fruit flavour. Lashings of pineapple and passionfruit were added during the fermentation stage to boost the tropical aroma and flavour. Hopped with Mosaic and Galaxy to further emphasise the tropical notes, this is a refreshing and enjoyably sour beer suitable for your summer BBQ.

Our home is in the South West of Victoria, surrounded by wind-blasted coasts and a volcanic formed landscape. Our take on a West Coast IPA sees a combination of Motueka and Eclipse hops, reinforced with a Motueka Hop Kief creating a symphony of aroma and flavour. Full on hop-forward flavours present themselves unapologetically. A bit like us, really.

But we might have to leave this one alone, it’s that good. Galaxy and Citra are the stars of our Hazy Pale, providing strong citrus, tropical,peach and passionfruit notes.

Koroitj (Tower Hill), a dormant volcano, is a short drive from our distillery and serves as inspiration for our Gin. Native botanicals from our friends at Worn Gundidj include. Correa Alba (hand picked from inside the volcanic crater), mountain pepper from the Ottway ranges & lemon myrtle. Blended with juniper, coriander, oranges and fresh lemon our Gin is the perfect expression of South West.

Named after ‘The Cutting’ a secluded but often turbulent beach a short drive from the distillery, this over proof gin allows a trio of myrtles (anise, cinnamon, and lemon) to really shine.
